This recipe is for all those who love eggs and I’m one of them. Eggs are all day food for me and love their versatility . There are innumerable recipes one can dish out from eggs which can be savoury or sweet. This one tops the list of my favourite recipes of egg.

Ingredients:

  • 6 eggs
  • 1/2 cup low fat mayonnaise
  • 1/4 cup English mustard sauce
  • 1 tsp vinegar
  • 1/2 cup grated carrot
  • 1/4 cup pomegranate seeds
  • 1 tsp black pepper powder
  • Salt to taste
  • Chilli powder for garnish

Method :

Hard boil the eggs and allow them to chill in the refrigerator before peeling them. Peel the chilled eggs and neatly cut them into half . Remove the yolks separately in a bowl and mash them well with a fork ensuring that there are no lumps. Add the mayo , mustard, salt , pepper and vinegar to this. Mix well and add some of the grated carrots to the mixture. Put the mixture into a piping bag and pipe on to the empty egg white shells. Garnish with pomegranate seeds and chilli powder. Serve chilled.
