It’s that time of the year, when strawberries are flooding the stores and great time to make desserts, with them. Today I ditched the quintessential strawberries and cream and made an absolutely healthy dessert which is easy and quick to make. Even better is that, this can be made with any seasonal fruit , mixed fruits or even dry fruits.

Ingredients :-

600 ml coconut milk

100 gm raw chia seeds

15-20 strawberries

1/4 th cup sugar

2 tsp vanilla

Mint leaves for garnish

Method :-

In a bowl mix the coconut milk and chia seeds along with the sugar and vanilla . Stir to dissolve the sugar completely and refrigerate for a couple of hours. Chop the strawberries into very small pieces and refrigerate them too. Take any transparent container and layer the pudding mixture alternating with strawberries. Garnish with mint and serve chilled.
