This custard like almond flour pudding, is a delicious Turkish recipe which is so easy to make. All you need to do is to whisk all the ingredients together and boil. It is gluten free and and healthy , as I have tweaked the recipe a bit , by using coconut palm sugar. One can substitute that with regular granulated sugar or any other sweetener. If almond flour is not available, one can blanch almonds and powder them. This recipe serves four.

Ingredients :-

2 cups milk

2 1/4 tbsp cornstarch

1/4 cup coconut palm sugar

1 egg yolk

1 tsp vanilla extract

1/3 cup almond flour

10-12 almond chopped

10-12 pistachios chopped

2 tbsp desiccated coconut powder

Method :-

In a sauce pan add half the milk and corn starch. Mix well with a whisk and then add the egg yolk. Whisk well again. Add the remaining milk , sugar and almond flour and mix till everything is combined well. Put the pan on medium heat and whisk continuously till the mixture comes to a boil. Reduce the heat further and allow the mixture to boil for further two minutes. When the mixture comes to room temperature , add the vanilla and coconut powder. Pour the mixture in desired containers and garnish with chopped pistachios and almonds. Chill in the refrigerator for an hour or two before serving.
