This is a super soft and moist cake , with the rich flavour of honey. Honey and coffee , also give it a deep golden colour. I quite often bake it and refrigerate it, which enhances its flavour and can then be served at room temperature. I have also tried to steam , tea cakes, before serving and they turn out really warm and moist so go ahead and refrigerate it to serve warm when required.

Ingredients :-

  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup honey
  • 1/3 cup oil
  • 1/2 cup warm coffee mix
  • 1/2 teaspoon vanilla extract

Method :-

Preheat the oven to 170 deg C and grease an 8 inch round baking dish. Mix half cup warm water with 1 tsp instant coffee powder and keep aside. Sift flour, salt, baking powder, baking soda and cinnamon into a large bowl. in another bowl , add eggs , sugar and honey and beat at a medium speed , till light and fluffy. Slowly add the oil and vanilla and continue to beat. The add the flour mixture, slowly and beat well, alternating with the coffee mixture. Pour the batter into the greased pan and bake for 30 – 35 mins. The cake is done when a skewer comes out of it clean.
