I have been intrigued by this recipe for a while and when I actually tried it , it has become , an absolute favourite of mine ! These potatoes have a lot flavour and a tangy sweetness from the balsamic vinegar. The herb used here is fresh basil but thyme or rosemary would work as well.


Ingredients :-
1 kg medium sized potatoes
2- 3 tbsps crushed garlic
1/2 cup fresh basil
2 tbsp balsamic vinegar
2 tbsp vinegar
1 tbsp maple syrup
1/2 cup extra virgin olive oil
2 tsp salt
1 tsp black pepper powder
1 tsp chilli flakes
Method :-
Wash the potatoes well and cut them into quarters , leaving the peel on. In a large pot boil water with salt in it and add the potatoes. Remove the potatoes when par boiled and drain them out. On a cutting board flatten each potato, using the back side of a bowl or glass. Now arrange them on a baking tray, lined with parchment paper. In a separate bowl, mix well all the other ingredients except basil and pour evenly to coat all the potatoes. Sprinkle finely chopped fresh basil on top and bake in an oven at 200 deg till nice and crisp..
