My son was craving the Dominoes garlic bread and since there’s no way to order it to where we are, I decided to try it out myself. It turned out to be so delicious that my son has decided to never order again. The trick is the hydration of the dough and once one gets a hang of it , there’s no need to eat breads made of all purpose flour. Although , I must warn that this dough tries your patience, but it surely is worth the effort.

Proofing stage

Ingredients:

  • 3 3/4cup whole wheat flour
  • 1 tbsp dry instant yeast
  • 2 cup warm water
  • 2 tsp sugar
  • 1 tsp salt
  • 3 tbsps of extra virgin olive oil
  • 1/4 cup soft butter
  • 1 tsp crushed garlic
  • 2 tbsp oregano
  • 2 tbsp chilli flakes

Method : In a bowl take Luke warm water and add the yeast and sugar and mix them well. Keep it aside in a warm place for about 10 minutes till the yeast froths up. In the meantime, sieve the flour and put it in a bowl along with the salt . Add the yeast mixture and bring the dough together . Knead well till it leaves the side of the bowl and then take it out on the lightly floured counter , add the olive oil and knead it for another 10 minutes by the stretch and pull method. Cover it and keep in a warm place for an hour to ferment. When the dough rises to double its size , punch it down lightly and knead again for a couple of minutes. Divide the dough into five equal parts and roll out each one into thick rounds . On one half of each round , apply the garlic butter and fold the other half on it to make a semi circle. Press gently to seal the edges. Apply more garlic butter on top and make around one inch vertical cuts on the bread. Prepare the others similarly and place on the baking tray and cover it. Leave it to rise again for around half an hour. Preheat the oven to 200 deg centigrade and bake for 30 mins or till golden on top. Apply some more garlic butter on the hot bread to keep the surface moist.
