Kebabs from any vegetarian source are a great favourite of mine and hence this creation. With a lot of cottage cheese sitting in my refrigerator, I wanted to move away from the stereotypical paneer tikka and create something new. The bell peppers here add the crunch to the recipe and cottage cheese the softness. It makes for a great snack.

Ingredients :-

250 GMs Paneer or cottage cheese

1 red bell pepper

1 yellow bell pepper

1 inch piece of ginger

2-3 green chillies

4 pods of garlic

1/2 cup coriander leaves

1 tsp black salt

2 tsps red chilli powder

1 tsp garam masala powder

1/2 tsp salt

2 cups of fresh bread crumbs mixed with salt and chilli powder

2-3 tbsps of all purpose flour

1/2 cup water

Oil for pan frying

Method :-

Mash the cottage cheese , well, in a bowl along with the dry spices and mix well. Roughly grind the coriander, ginger , garlic and green chillies together and add this to the cottage cheese mixture and mix thoroughly. Cut the bell peppers into thick rounds and remove the centre with the seeds. Now keep each round on the palm and press some of the cottage cheese mixture to fill the bell pepper slice. Ensure that the mixture remains inside the bell pepper slice and does cover the edges.Make a thick paste of the flour and water and apply on one side of the round only on the cheese mixture leaving the bell pepper edge clean. Press the side on to the bread crumb mixture and apply the paste on the other side and turn to coat the other side also with the bread crumbs. Press well and keep it aside. Similarly prepare all the rounds and leave them to chill in the refrigerator for about half an hour. Pan fry them carefully with little oil till both sides turn crisp and golden. Serve hot with any sauce of choice.
