The versatility of mushrooms is brought out in these succulent, mouth melting kebabs which are relatively easy to make. These can be had as a snack but I prefer them as a starter . If you want to make a meal out of them , then just use them as a filling for a wrap adding a salad and sauces of your choice to them. My preference, though , is the coriander chutney that goes well with a lot of Indian snacks .

Ingredients:

2 packs of regular button mushrooms

50 GMs paneer or cottage cheese

2 boiled and peeled potatoes

3 tbsps besan or gram flour

2 large onions

8-10 cloves of garlic

1 inch piece of ginger chopped roughly

1 tsp haldi or turmeric powder

1 1/2 tsp red chilli powder

1/2 tsp cinnamon powder

1/4 tsp cardamom powder

2 tsps garam masala powder

Salt to taste

3 tbsp ghee or butter

Method:

Heat a pan and add ghee or butter to it. Add the chopped onions and sauté for a few minutes. Add ginger and garlic and fry for some more time . Finally add the washed and chopped mushrooms to the pan. Allow the mushrooms to fry and cook completely. Once they are done , add all the dry masalas, mix and keep the mix in a bowl to cool down. Now in the same pan roast the gram flour on low heat , till it gets aromatic . Make a paste of the mushroom mixture and add the cool gram flour to it. Mash the potatoes and the cottage cheese separately and add them to the mushroom mixture. Mix everything well and make round patties and shallow fry them. Enjoy them while hot.
