On a rainy day , nothing else can make me drool more than a piping hot soup . Soups are soul food and also so filling when you are on a diet . In my soups I don’t like to add cream but like to make it rich and creamy naturally and allow the flavour of vegetable to stand out.

Ingredients:

150 gms yellow pumpkin

1 large onion

5-6 cloves of garlic

2 tsp of extra virgin olive oil

Salt to taste

1/2 tsp chilli flakes

1/2 tsp black pepper

1 tsp oregano.

Method:

Peel and cut the pumpkin into large pieces and place it in a baking dish . Add onions, garlic to it and pour the extra virgin olive oil on it . Sprinkle , salt , chilli flakes , oregano and black pepper over it. Place the dish in a preheated oven at 275degrees centigrade for about half an hour . Once done cool and purée the pumpkin. Sieve and adjust the consistency with water and bring to a boil. Serve hot with garlic bread or croutons.
