This recipe is inspired from a friend’s recipe , which I had come across many years back. I have modified it to my family’s liking and it did turn out to be great for a rainy day hot snack. A bit tedious, I must say , but still worth it. I have used potatoes in this recipe but sweet potato would also be a great substitute. One can also use a vegetable mix for the filling.

Ingredients:

  • 5-6 small size papads
  • 3 boiled potatoes
  • 2 cups besan or gram flour
  • 1/4 th cup rice flour
  • A pinch of soda
  • 2 tsp salt
  • 1/2 tsp chilli powder
  • 1/2 tsp Garam masala powder
  • 1/2 tsp amchur powder
  • 1/4 tsp cumin seeds or zeera
  • 1/4 th cup
  • Oil for frying

 

Method :

Heat a pan and 2 tsp oil to it. Add zeera and allow it to splutter and then add the boiled and mashed potatoes. Add a tsp of salt, chilli powder, amchur, and garam masala powder . Roast for a few minutes and allow the mixture to cool. Make a thick batter of gram flour , rice flour , soda and salt with water and keep aside. Soak each papad in a bowl of water for a few seconds till it becomes soft. Over soaking the papads will make them soggy . Put a tsp of filling on the soaked papad and roll it gently like a spring roll. Dip this roll in the prepared batter and deep fry till crisp. Cut the rolls diagonally into two and serve hot with coriander chutney.
