I have to admit that I love all variations of hummus and the classic chickpea hummus tops the list . Hummus may be a bit time consuming to make , specially when I start from soaking chickpeas overnight. But I would still not go for a store bought jar of hummus. It’s never the same.. I have used multigrain bread in this recipe but use whatever bread you like as long as the slices are slightly large so as to hold all the layers well. This sandwich has many layers to prepare but believe me when it all comes together, it’s just worth it. So let’s just get to making it.
HUMMUS
Ingredients:
- 1 cup chickpeas soaked overnight and boiled
- 2 tbsps tahini
- 3-4 pieces of garlic
- 1 tbsp extra virgin olive oil
- 1 tsp salt
- Juice of half a lemon
Method:
Blend all the ingredients to a smooth paste and adjust the consistency with the water used for boiling the chickpeas or more extra virgin olive oil.
BELL PEPPER JAM
Ingredients:
- 2 roasted red and yellow bell peppers
- 1 onion chopped
- 1 tbsp olive oil
- 1 cinnamon stick
- 1 star anise
- 11/2 tsp brown sugar
- 11/2 tsp balsamic vinegar
- Few basil leaves
- Juice of half a lemon
- 1/2 tsp salt
Method:
Roast the bell peppers with some salt and pepper and olive oil for 15 mins . Discard the seeds and peel the peppers . Slice them into strips and sauté along with the onions in oil and add cinnamon stick and star anise to it. Once they are all done add brown sugar , balsamic vinegar and basil leaves and cook till it all comes together. Add the lime juice and keep aside.
COLESLAW
Ingredients:
- 1 cup shredded cabbage
- Thinly sliced apple
- 1 tbsp vinegar
- 11/2 tbsp mayonnaise
- A few chopped jalapeños
Method:
Mix everything well and keep aside
GRILLED MUSHROOMS
Ingredients:
- 2 cups Mushrooms
- 1 tsp oil
- A pinch of salt
- 1/4 tsp pepper powder
Method:
Slice the mushrooms and sauté them in a pan with the oil. Cook without the lid till they are done and add the salt and pepper.
For putting together the sandwich, Put hummus on a slice of bread and add a layer of the bell pepper jam followed by a layer of coleslaw. Top it with a few of the grilled mushrooms and close it with another slice of bread with hummus on the inside. Grill the sandwich in a pan with oil and crisp evenly on both sides. Serve hot with fries or salad .
