Creating a savoury pancake dish had always been on my mind but could not think of a sauce to go with it. But when a mango salsa came to my mind , it seemed like a perfect match. This dish is loaded with the freshness of vegetables and packed with lots of flavour. The preparation time is short and hence makes an easy meal option. Here I have used whole wheat flour for the pancakes but will surely try other healthy flours too. One can make variations to the the salsa too, as long as it turns out tangy !!

For the pancakes

Ingredients :-

2 cups whole wheat flour

1 capsicum finely

1 carrot grated

1 onion finely chopped

1/2 cup grated cheese

4-5 pods of minced garlic

1 egg

1/2 tsp baking powder

1 tsp Salt

1 cup of milk

Method :-

Mix all the above ingredients to make a smooth batter of pancake consistency. You can add more milk if the batter is too thick. Keep the batter aside.

For the Salsa

Ingredients :-

2 ripe mangoes peeled and chopped fine

1 capsicum finely chopped

1 large onion finely chopped

2 large tomatoes finely chopped

1/2 cup chopped coriander

1/4 cup chopped jalapeños

1 lemon

1/2 tsp black pepper powder

Salt to taste

Method :-

In a bowl bring all the ingredients together and mix well for the flavours to blend and refrigerate till ready to serve.

Make small pancakes and serve them with lots of chilled salsa and cheese tuile .
