I’ve tried to make this variation of ravioli because we all love baked beans and so I thought of combining it with ravioli . In this recipe I have used the tinned beans but it would be good to make the beans at home. The extra virgin olive oil adds to the flavour of the dough. I have toned down the spice but the spice level can be increased by adding more chilli flakes. Serve the ravioli with hot sauce and garnish with the greens of the onions and a slight sprinkle of grated cheese.

Ingredients:

For the stuffing –

  • 1 cup tinned baked beans
  • I onion chopped fine
  • 1/2 tsp chopped garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper powder
  • 1/4 tsp chilli flakes
  • 1 tbsp olive oil
  • Method:

In a pan heat the oil and add the onions and garlic. Sauté them till the onions become translucent and add the beans. Add the salt, pepper and chilli flakes and sauté for a few more minutes till the stuffing comes together and the liquid dries . Put this aside to cool.

Ingredients:

For the ravioli –

  • 2 cups whole wheat flour
  • 1 egg
  • 1 tbsp extra virgin olive oil
  • 1 tsp salt

Method :

Knead all the above together and make a soft dough. Allow the dough to rest for 10-15 mins. Make large balls of the dough and roll each one out into a thin , large round. Use a cookie cutter to cut rounds of the dough. The left over pieces of the dough can again be rolled out to make more rounds . Place a tsp of the stuffing in the centre of the round and brush the edges with water. Place another round on this and press the edges gently . Add them gently into a pot of boiling salted water for a few minutes. Once the raviolis rise in the water take them out on a mesh to remove excess water.

Ingredients:

For the sauce –

  • 2 cups fresh tomato blanched and puréed
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 onions chopped fine
  • 2 spring onions chopped with greens separated
  • 1 tsp garlic paste
  • Salt to taste
  • 1/2 tsp sugar
  • 1 tsp oregano
  • A few leaves of fresh basil
  • 1/2 tsp chilli flakes
  • 1/2 tsp black pepper powder
  • 2 tbsp olive oil

Method:

In a deep pan , heat the oil and sauté the onions and garlic. Once the onions soften add the pepper and spring onions. When the veggies are cooked , add the tomato purée and the spices. Allow to simmer for 5 mins and add the chopped basil leaves. Place the ravioli in the serving plate and pour the hot sauce over it.
