Now , if there’s a delicious soup for dinner , then a warm and flavourful bread to go with it , is the best combination one can hope for. So I started with making a tomato soup , in what is called the Indian railway style, but ended up with wanting more . I came across the babka muffin recipe but altered it to make it healthier and as per our tastes. The filling can vary and chopped nuts or cheese can be added. I have used a kitchen aid stand mixer but hand kneading works just as well.
Ingredients :-
1 1/2 cup milk
14 g fast acting dry yeast
3 tsp sugar
2 tsp salt
2 eggs
3 cups whole wheat flour
1/4 cup softened butter
For the filling
10-12 pods garlic
1/2 cup chopped coriander
2 tbsp pizza seasoning
2 tsp chilli flakes
1 tsp salt
1/4th cup extra virgin olive oil
2 tbsp black sesame seeds
Method:-
Warm the milk to a lukewarm temperature and add the yeast and sugar to it. Mix well and leave it in a warm place , to allow the yeast to activate. Then add the eggs and salt and mix well. Add the flour in batches and knead for 5 mins. Add the butter and knead for another 5 mins or till the dough looks smooth and elastic. Keep the dough in a bowl and cover it. Leave it in a warm place, for about 2 hrs , till the dough doubles in size.
Bring out the dough on to a floured counter and roll it into a thin rectangle. Combine the olive oil , seasoning , chilli flakes and salt and mix well. Spread this mixture on the rolled dough , evenly. Then spread the chopped coriander evenly. Now roll the dough tightly from the longer side of the rectangle. Pinch the edges of the roll to prevent them from opening. Cut the roll into 12 equal parts.
Grease a muffin mould well and take each part and twist it from the centre. Place all the twisted parts in mould and brush them with milk. Sprinkle the black sesame seeds on top. Cover the mould and leave it aside to rise , for another half an hour. Bake in a preheated oven , at 190 degrees C , for about 20 mins.
