Quinoa and oats bread with roasted bell pepper sauce

Woah !!! What a long break from writing this blog and I missed it so much . Destiny always has plans for us. Well in this break I’ve learnt about a lot of healthy ingredients and I’m trying to incorporate them in my cooking. Recently at a fancy grocery store I picked up a quinoa bread and had to put it down as it was so overpriced. That’s how I tried this recipe , tweaking it to my liking and it’s been a huge hit. This bread has a dense grainy taste and a distinct flavour. I served it warm with a bell pepper sauce but it’s good with just butter too. I made my own quinoa and oats , flour simply by grinding them to a fine powder .

Ingredients:

  • 2 cups quinoa flour
  • 1 cup oats flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 tbsp olive oil
  • 2 cups milk
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic paste
  • 1/2 tsp chilli flakes
  • 1/2 tsp oregano.

Method:

Preheat the oven to 200 degree centigrade and keep a greased loaf tin ready. Mix the dry ingredients well in a bowl. Whisk together all the wet ingredients and pour them into the dry ones. Mix well and pour the mixture into the prepared tin. Sprinkle sesame or flax seeds on top. Bake for 60 mins. After the bread cools down cut into slices and serve warm with the sauce.

Sauce:

2 tomatoes cut into large pieces

1 roasted and peeled red bell pepper

1 piece star anise

I small piece cinnamon

1/2 tsp fennel seeds

2 whole red chillies

1 bay leaf

1 tsp salt

1/2 tsp black pepper powder.

2 tsp oil

Sauté everything together , in a pan , till cooked and grind together. Remove the bay leaf before grinding.
