MUSHROOM RICE

It’s been a busy holiday season for me , with all the travel and also the wedding season in India. During weddings the food gets too overwhelming and when you are done with it, you want to just eat something nice yet simple and light. Last evening I had mushrooms sitting nice and fresh in the refrigerator and I thought of making a rice dish with them. This recipe is so easy anyone can make it.

Ingredients:

  • 1 packet of regular mushrooms
  • 2 onions
  • 4-5 cloves of garlic
  • 4 small tomatoes
  • 1 cup basmati rice
  • 1 cinnamon stick
  • 1 bay leaf
  • 2 black cardamoms
  • Salt to taste
  • 1 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 2 tsp pizza seasoning
  • 2 tbsp oil
  • Coriander leaves for garnish

Method:

Wash and cut the mushrooms in four pieces and sauté them in a pan without oil till done. Put them aside in a bowl. Cut the onions into thick slices and add them to the same pan with oil. Add finely chopped garlic and sauté till the onions turn golden. Chop the tomatoes finely and add to the onions . Add salt , chilli powder and sauté till the tomatoes are done. Add the black pepper powder and pizza spice and allow the mixture to dry . In another pan cook the basmati rice with cinnamon, bay leaf and cardamom. Add a little salt and oil to the rice. Once the rice is cooked , serve it in a dish with layers of rice and mushrooms mixture and garnish with coriander leaves.
